Chicken Feta Kale Burgers!!!!!


 

So this is the first blog entry I have done in a while. I randomly look at new recipes and get the urge to cook them. The main reason why I chose to blog about some of my creations is because I can never seem to follow the exact recipe! My husband always tells me to write down what I use because we end up liking it and I can’t remember what I threw in to create the masterpiece lol. Anyway, I saw some stuffed turkey burgers earlier today and since I am not a fan of ground turkey, I decided to look up ground chicken burgers. When I found the recipe for feta kale burgers I was so excited. As I began to pull the ingredients out of my refrigerator, I saw other foods that I thought would make these burgers even better! So this is a recipe that I found and threw my spin on it J Hope you enjoy!!!

Let me know if you decide to mix it up and make changes, I’d love to hear about other ways to make these burgers.

 


Ingredients:

Kale

1 lb Ground Chicken

Olive Oil

1 Egg

Feta Cheese

 

Chopped Fresh mushrooms

½ Avocado Chopped

Fresh Minced Garlic

Salt, Pepper, Parsley, Cilantro, Basil
 

Step One:

First you have to prepare the Kale by steaming it on the stove with a little water and a tiny bit of olive oil

Step Two:

While the Kale is steaming, put all of the ingredients (except for the cheese) into a bowl and mix it up with your hands or a spoon. I add the egg last.

Step Three:

Once you have everything mixed pretty good, turn on the flame to heat up the pan.

Step Four:

Lastly you will add the Kale and take all of the mixture and separate into about 7 patties then place a handful of feta cheese in the middle and form a ball. You want the feta cheese to be completely covered so that it will cook in the center.

Step Five:

Once all of the patties are made, place them on the warm pan and wait for it to cook! They should brown on one side then you can flip them over. It shouldn’t take longer than about 10-15 minutes to cook.

Avocado BLT!

Have you ever just wanted a different but still yummy sandwich?!? Well, grab an avocado the next time you hit the grocery store and make sure you have lettuce, tomatoes and bacon and you will have a great snack! 

To make this even lighter, you can always serve it without the bacon. I ate mine without but it still tastes great if you need to have a little meat added to it. For a low-carb BLT you might also like a BLT Lettuce wrap! Try them with avocado too! 

 BLT with Avocado 

 Ingredients: 
 3 slices bacon
 2 slices honey 7-grain bread, toasted
 1/4 cup lettuce of your choice
 2 thin slices tomato
 1/4 avocado sliced
 Salt and pepper to taste
 Olive oil Mayonnaise) optional

Omelet Muffins!

So, I am very excited to share my new quick breakfast creation with you all! Since I have to be to work fairly early Monday through Friday and my husband is not a huge fan of carbs, I was trying to think of a quick breakfast meal for both of us (besides cereal lol). We both love omelets and I was trying to figure out a pretty quick way to make a nice scrumptious omelets each morning. After looking though my cabinets and the refrigerator, I came up with this. . . . .


Omelet Muffins!!!!!
What you will need:
1.       Muffin/cupcake pan (12)
2.       Eggs (5)
3.       Salt, pepper, garlic powder
4.       Onion
5.       Spinach
6.       Mushrooms
7.       cheese
8.       Bacon bits (optional)

Directions:
1.       Gather the veggies and spices and slice them up.
2.       Add the eggs and scramble them all together with the veggies
3.       Carefully pour the mixture in each muffin section
4.       Sprinkle a little cheese on the top
5.       Pop them in the oven for about 10-15 minutes at 350 degrees (or until the eggs are solid)

Now you have breakfast made for the week! Enjoy!

Red Velvet Cookies Using Duncan Hines Cake Mix!

Looking for a yummy dessert but you don’t want the cake that you have in your cabinet. . . turn it into cookies!!!

Ingredients & Directions
  • 1 box Duncan Hines Red Velvet cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • Powdered sugar (optional)
  1. Preheat oven to 375 degrees.
  1. Combine one (1) box of Duncan Hines Red Velvet cake mix, two (2) eggs and one-third (1/3) cup vegetable oil using a hand blender or wire whisk.
  1. Form teaspoon size balls and place on a lightly greased cookie sheet or baking pan about one inch (1") apart. Sligtly pat down the top of each ball.
  1. Cook for 8-10 minutes (the top of the cookie will crack).
  1. While hot, lightly sprinkle the top of the cookie with powdered sugar (optional). I didn’t do this step because I have a toddler who couldn’t wait to dig in :-)

Last Minute Healthy Recipe!

Well, I came home from work today and had to hurry up and think of something for the family to eat. Its been kind of hard lately to think of fast meals since my husband is doing his low carb thing, I'm trying to eat healthy so I can get my pre-baby body back, and I try to feed the kids healthy foods. Today, I did pretty well for no prep. So, this is what I came up with . . . .

Stuffed Chicken Breast!

Ingredients:
Chicken Breast
Spinach
Mushrooms
Onion

Pepper
Salt
Garlic
Vinegar
Olive Oil
Paprika
Water
A pinch of brown sugar

Directions:
1. Take the chicken breast and slice them so that they are almost cut completely in half.
2. Mix all of the spices with the oil and water to create a liquid spread. Spread it over all sides of the chicken.
3. Take the spinach, mushrooms, and onion and a little bit of the spread and chop it up.
4. Place the chicken breast on a bed of fresh baby spinach and Brown rice.
5. After everything is chopped, stuff the chicken breast then add a little cheese.
6. Take the remainder of the spread and pour it on top of the chicken. 
7. The oven should be at 350 degrees and the chicken will cook for about 45 minutes!


                              

It turned out great and the family loved it!
